We have been running around a little crazy these last two weeks. With 4 kids – we have had 4 back to school nights to attend. (some districts call this type of evening - Open House)
I love getting the chance to meet the teachers – as the kids get older we get such little time in the classroom. But because these events take place in the evening, they really create havoc with an already jam packed schedule. And taking time away from the family during peak homework hours is difficult too. I just cross my fingers and hope all of those assignments get done.
And dinner is a whole different ballgame. To avoid the last minute – “let’s get take out” solution, I really make an effort to plan meals ahead on nights when I won’t be home.
So – along that line – I spent the morning today making my Crock Pot Beef Stew recipe that I posted last week. This way dinner was ready at just the right time – and I even have a few extra moments to eek out this post.
And – here’s the bonus – as I cooked today, I took pictures of the whole process. Given my amateur (and even that is a compliment) photography abilities – I hope they look good and, errr – appetizing. I will post them tomorrow when I have organized the bunch.
